Greek eggplant:

Step 1: Prepare the eggplant.

Choose ripe eggplant, in no case not overripe (they contain harmful substances). Vegetables must be thoroughly washed and cut lengthwise into 2 parts as in the photo. Step 2: Bake the eggplant.
