Step 1: prepare the oranges.

We wash the oranges under running water. Using a paper towel, wipe the fruit from the water and rub the zest of oranges directly into a free plate using a fine grater. Then we shift the citrus fruit without the skin onto a cutting board and use a knife to cut it across into two halves. Using the same sharp equipment, we extract the seeds from the pulp of the ingredient, and using a manual juicer, squeeze the orange juice. Pour the citrus liquid into a separate cup. Discard the remaining fruit pulp. Attention: for the preparation of glaze we need 1 tablespoon of zest and 100-150 milliliters of freshly squeezed orange juice depending on how thick you want to make the icing. Therefore, it is best to separate the orange components in advance and arrange them in separate containers, so that you have enough to prepare the dough and to prepare the glaze. And to preserve the freshness of the zest and juice for the glaze, we wrap the dishes in which we put these ingredients in plastic wrap and put them in a refrigerator for storage.

Step 2: prepare the orange-sugar mixture.

Pour sugar into a free bowl with a glass, and then, using a tablespoon, transfer 2 tablespoons of orange zest to the same container. Using the same tableware, mix the two ingredients well until smooth.

Step 3: prepare the flour mixture.

Sift the flour through a sieve into a separate bowl, in order to enrich our ingredient with oxygen from the air and remove lumps from it. In a bowl with sifted flour using a teaspoon, add baking powder and salt. Using a hand whisk, mix the flour well with other ingredients until a homogeneous mass is formed. We take wheat flour, finely ground and only the highest grade, then our bakery products will definitely turn out to be very tasty, soft and tender.

Step 4: prepare the butter.

We take out the butter from the refrigerator and until it becomes soft, put it on a cutting board. So it will be much easier to cut it into small cubes. Using a knife, grind the creamy ingredient and after - transfer it to a free plate. And only after that, set the oil aside to cool to room temperature. Attention: Do not melt the component using a stove or microwave.

Step 5: prepare the dough.

Transfer the orange-sugar mixture from the bowl into the blender bowl and, using a tablespoon, transfer the pieces of room temperature butter to the same container. At medium speed, mix our two ingredients for 3-4 minutes. Then, with the help of a knife, we break the chicken egg, pour the protein and yolk into the container to our components and again beat everything with a whisk until a homogeneous mass is formed. Now pour into the blender bowl 2 tablespoons freshly made orange juice and again, turning on the blender at medium speed, mix all the ingredients well until smooth. Lastly, in a container, with the help of a tablespoon, add portionwise flour to the resulting mixture and, having reduced the speed of the appliance to a minimum, knead our dough. The dough should not be liquid, but soft and elastic.

Step 6: Cooking Cookies

Put the dough on the kitchen table, previously sprinkling flour on its surface. We form a thick sausage from the dough 5-6 centimeters and with a knife we ​​cut it into small pieces, weighing 30-35 grams each, after - breading them in flour. And then we form "koloboks" from each test piece, slightly pressing them with the palms of the hands on both sides. It is not necessary to press hard so that they do not look like flattened cakes. Attention: Before baking, the "little balls" can be put in the refrigerator for several hours to insist. And now we cover the bottom of the baking sheet with baking paper and put the balls of dough on it next to it at a small distance from each other. Place the pan in the oven, preheated to a temperature 180 ° C, and bake cookies for 10-15 minutes. Cookies should be slightly golden in color. Do not worry that in appearance it will remind you of a not-so-finished baking, it’s not so, such a color is what our cookies need.

Step 7: prepare the icing.

Pour sugar powder into a sieve with a tablespoon and sift it directly into a bowl. Then we take out freshly made orange juice and zest from the refrigerator, which we left to prepare the glaze, and add the icing sugar to the container. Using a hand whisk, beat all the ingredients well until a dense, homogeneous mass is formed. Glaze in its consistency should resemble thick sour cream and should not be very liquid, because after applying it to cookies, it should harden, not drain. Therefore, first add the zest of orange to the icing sugar. And then, only gradually, add juice in small portions and monitor the consistency of the glaze so that it does not turn out to be liquid.

Step 8: apply the icing on the cookie.

Attention: apply glaze only on cooled cookies. We collect the finished icing into a tablespoon and gently pour it onto the surface of each cookie, trying not to spill the sweet thick mixture. And now, so that our icing hardens on the cookies, we put the finished baked goods on the wire rack from the oven. And we put the lattice on top on a baking sheet, since the icing is still liquid, it will still drain from the cookies. We leave the dish for a while aside so that it is insisted and the icing is frozen on it.

Step 9: serve the iced cookies.
